Tomato and mozzarella

Ingredients: 
  • 6 plum tomatoes, sliced.
     
  • 250 g (8 oz) mozzarella, drained and sliced.
     
  • 2 spring onions, sliced.
     
  • 90 g (3 oz) black olives.
     
  • black pepper
     

Dressing:

  • 3 tablespoons extra virgin olive oil,
     
  • 1 clove garlic, crushed,
     
  • 2 teaspoons balsamic vinegar,
     
  • 2 tablespoons chopped fresh basil

 

Method: 
  1. Arrange tomatoes, mozzarella, spring onions and olives in layers on serving plates and season.
     
  2. Heat oil and garlic in a small pan over a low heat for 2 minutes until garlic has softened. Drain on absorbent paper (like a paper towel).
     
  3. Add vinegar and basil, whisk to combine and pour over salad.
